There is no practical difference between deionized or destilled water, the
way they are procduced is
different (ion exchange vs. destillation) but the result is in both cases
almost chemically pure Water - i would be cautious in both cases as neiter
is food grade, for one thing the microbiological puriry is something i would
be cautious about - don't know about impurities that are allowed for
technical purposes that would make it unsuitable for consumption.
RO water is IMO for brewing/yeast culture/yeast media production equivalent
to deionized/destilled water, they contain some ions but rejection of ions
is usually at rates somewhere in the region of 98%, so you can practically
neglect the impurities. I let dry off some of my RO water in a glass beaker
and it dissapeared without leaving any noticable residue behind (the tap
water that is the source has 1500mg/l total dissolved solids, 354 mg/l HCO3
).

I've always sold them as one and the same, as for how the compare to RO
I haven't a clue.
I routinely use the off the shelf stuff for yeast washing and storage.

I found this on a UK website:
DEIONISED WATER
Production Method:
Ion-exchange treatment of drinking water supplies on our site.
Standard Grades:
Available to all BS EN ISO 3696 (was BS 3978 Grade 3 1987).
Recommended uses:
Meets the rigorous standards required for aviation fluid mixtures,
potable beverages and food grade blending for flavour extractions.
However, it is not available as a "purified water" grade for injection
or other pharmaceutical preparations.
I've sent a mail to the product manager for the stuff we sell to see if
he's any other info.

I believe the difference is essentially process related, heat versus ion
exchange.
Both have less dissolved solids than reverse osmosis water.
I'd use whatever is the cheapest if you're using it for brewing.

It is actually for long term storage of a single yeast colony from
plating. The process I believe calls for sterile Distilled water which
is why I asked, but I will probably go ahead on use Deionised which is
readily available
