Well, its been embarrasing how long I've been without
actually making any beer, so it's a day off work (plus
SWMBO has gone out for the day with the kids, so its
a winner on all counts) and time to dust off that old
boiler.

So far no major cockups beyond having the drill in reverse
and not being able to work out why the grain wasn't milling.
By the time I'd realised, the battery was flat again
so that gives me time to post to you here :)

Found two opened sacks in the shed had been infiltrated
by some mystery animal which has shed its faeces in
there. I don't know what it was nor do I care, as I can't
think of any answer that would make me feel any better
about it. I shall just quietly dispose of it, and sob
over the wasted money.

Going with a fairly simple beer, just pale with a hint
of crystal/melanoidin, with EK Goldings & Fuggle.
Will use Andrew's favourite yeast (Safale) or perhaps
Nottingham.

Wish me luck. Not done this in yonks!

Yup, remembered that one :)

Even remembered to turn the outlet tap off before filling
the boiler with strike water! Dry toes!

I bought a bag of it recently from my LHBS but don't
yet understand how to use it properly.

Most of my recent brews have been pale malt 85%, torrefied
wheat 5%, crystal malt 10%. S04 yeast. Bittered with fuggles,
goldings for aroma.

GOOD LUCK with the brew session.

Well, its boiled, just chilling it (immersion chiller, still
haven't finished off that CFC in the corner of the shed).

Only thing that went wrong was: after spotting the "extra
weight" in the malt sack, decided to use an unsullied, fresh
sack, and put the unused stuff in a plastic dustbin for
safety. Managed to spill malt all over the shed floor.

Melanoidin: adds body to a beer. Don't use too much or it
will have a digestive biscuit quality (I think, but its
been a long time). Its similar to crystal malt but without
the sweetness. Try it in place of crystal, and use no
more than 10% in your mash.

Melanoidin is used like crystal its a lot more expensive and to my dormant palate not worth the extra .
Better in lagers,pilsners etc where the difference can be appreciated .
Great beers are brewed with high % of crystal (Sarah Hughes e.g) but try and stay around 2-4% and Torrified wheat can give off flavours it adds to head retention so does Flaked barley without the off flavours .
Give us a shout and I'll start you a Hook or Wadworth yeast and savour the difference .

Hehe, doubled up, played my joker:

Went for another 10 gallons yesterday.

Wednesday's beer was under-target, with an
efficiency of about 50% (couldn't be bothered
to wait to sparge properly). Saturday's was
bulked up with lots more malt, so extraction
was a lot better.

Beer #1 hit 1030 in the fermenter, so I'm
calling it "Nearly Beer"

Beer #2, diluted wort from the Saturday brew,
hit 1045, so I'm calling that "Beery Beer".

Beer #3, undiluted wort from the Saturday
brew, hit 1070+, so I'm calling that "*Really*
Beer"
